Hotpot of pork with apples and bacon

750g pork shoulder, broken

25g unsalted butter, melted
Heat oil in a saucepan. Flour the pork. When the oil is hot, add the pork and brown. Remove from heat and set aside.
Add the onion and bacon and cook over low heat. Return the pork to the pan and add carrots, sage, cider, broth and mustard. Cook and keep on low heat for 10 minutes. Add apples.
Heat oven to 150 degrees. Season the potatoes with the butter and align on the surface of the pan to form a single layer. Cover with foil and leave in oven for 1 hour and 30 minutes. Remove the foil and cook for another 30 minutes.
